Oatcakes

200 gm Plain Flour
150 gm Medium Oatmeal
3 Teaspoons of Sugar
a good pinch of
Salt
25 grams Fresh Yeast
200 mls Warm Water
Mix all the the dry ingredients together then make a well in the middle like you would if you were making bread. Put the yeast into 200 ml of warm water which has one Teaspoon of Sugar dissolved in it. Let the yeast begin working and then add it to the Flour/Oatmeal mixture and mix together. Add more water until the consistency of the mix is like thick cream. When the volume of the mixture has doubled in size pour portions of it onto a greased hot plate to give discs which are about 10 inches across. Once the batter has set turn the Oatcakes over and continue cooking until they are just showing light brown marks on the surface. Put on one side to cool with either cling film between the cakes or parchment paper just to stop them sticking together.
