Okra Curry

12 ounces lady's fingers or okra -- washed and sliced
2 tomatoes -- chopped
1 large onion -- chopped
1 2" piece ginger root -- crushed
3 birds' eye chillies
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons garam masala
1 bunch coriander leaves
Fry the onion in a wok or large frying pan until soft and golden brown. Add the ginger root; chillies and dry spices. Cook for a few minutes.
Add the tomatoes.
Add the okra slices; garam masala and coriander leaves, stir gently until the okra is bright green and tender.
Serve immediately.
