Omelette Salad

4 eggs
selection of lettuce leaves
3 medium tomatoes -- skinned & seeds removed
half cucumber -- peeled & seeds removed
1 small capsicum (bell pepper) -- peeled & seeds removed
1 small bunch basil
1 small bunch flat leaf parsley
1 small bunch tarragon
Dressing
2 teaspoons whole grain mustard
4 fluid ounces best quality olive oil
2 tablespoons wine vinegar, any
3 anchovy fillets
2 cloves garlic
big grind of black pepper
Slice the tomatoes, cucumber and capsicum, lightly salt and leave to stand in a colander whilst preparing the remaining
ingredients.
Chop half the herbs finely, beat the eggs and mix in the herbs. Make four thin omelettes and put to one side to cool.
Make the dressing by blitzing all the ingredients in a blender.
Assemble the salad by placing leaves in a bowl with the drained tomatoes, cucumber and capsicum (bell pepper), add the dressing and toss gently.
Roll the omelettes loosely and slice thinly, scatter the strips on top of the dressed salad. Top with the remaining herbs coarsely chopped.
