Orange Cake

1 orange about 6ozs, preferably organic and thin-skinned
6 ounces butter or Olivio margarine
6 ounces light brown sugar
2 eggs
6 ounces self raising flour (or plain with 1 heaped teaspoon baking powder)
1/2 teaspoon bicarbonate of soda
2 ounces ground almonds

Cut up the orange a bit, removing any pips, and process till as near a puree as poss.

Add all remaining ingredients and blend till mixed.

Pour into greased 9" tin and bake about 30 mins at Gas 5.

When cool, mix up a bit of icing sugar with orange juice and drizzle thin criss-cross lines overall.
