Orange Liqueur Pancakes

4 sweet French style crepes
75 grams caster sugar
75 grams butter
1 small orange -- juiced
2 tablespoons Grand Marnier or other orange liqueur
3 tablespoons cognac

In a bowl or food processor cream the butter and sugar, add the orange juice and liqueur.

If necessary refrigerate until firm enough to spread.

Spread 2/3 of the flavoured butter onto the pancakes and fold into triangles.

Melt the remaining butter in a pan. Add folded pancakes and turn in the butter until hot.

Pour over the cognac and ignite.

Serve.
