Pears Poached in Red Wine

125 mls red wine
125 grams sugar
juice of half an orange, strained
cinnamon stick
2 pears, ripe but not soft
2 teaspoons arrowroot

Put the wine, sugar, orange juice and cinnamon stick into a pan over a low heat, stir occasionally until the sugar has dissolved.

In the meantime peel the pears carefully leaving the stalk intact and remove the cores.

When the sugar has fully dissolved add the pears and simmer very gently for 15-20 minutes.

Remove the pears to a side dish. 

Blend the arrowroot thoroughly with 1 tablespoon of water and add to the red wine mixture, stir in thoroughly and simmer for a minute or so until the syrup has thickened slightly.

Serve either hot or cold.
