Picnic Loaf

A
round bread (Italian breads work well with this), but a lid from the top of the
bread and remove most of the soft crumbs leaving a shell. Brush inside with
olive oil or you could spread pesto or olive paste inside.
Place layers of char grilled capsicums, eggplants, artichokes, zucchini, sun
dried tomatoes, ricotta, cheese, sliced meats - whatever takes your fancy. Wrap
the loaf in plastic wrap and place a weight on top -refrigerate overnight.
Cut into slices to serve.
