Pineapple Gelato

2 small pineapples -- peeled and cored
1/2 pint unsweetened pineapple juice
1/4 pint water
1 lemon finely grated rind and juiced
8 ounces caster sugar
3 tablespoons alcohol, ie rum
1/2 pint cream
Blitz pineapple in a blender to a rough puree with lots of texture.
Mix puree with pineapple juice, water, lemon rind and caster sugar, bring to the
boiled stirring until the sugar has dissolved, simmer for 5 minutes.
Chill and add alcohol. Add lemon juice.
Start to freeze. When still soft, fold in the cream and continue to freeze and beat or churn.
