Poppelwell's Roast Lamb

1 leg lamb
garlic cloves
2 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 tablespoon shrimp paste, (the smelly sort)
1 teaspoon white sugar
black pepper

Slit skin on meat and push in slivers of garlic. 

Mix soy, shrimp paste and sugar and rub lamb all over and marinate at least 6 hours, the longer the better. 

Roast slowly, baste with remaining marinade, for 3 - 3 1/2 hours, adding potatoes and pumpkin 1 hour before meat is ready. If you don't have a covered BBQ, cook in an oven at 160 C and still eat outside
