Posh Oysters

12 oysters -- open, on half-shell
4 tablespoons sour cream or crème fraîche
2 tablespoons red lumpfish roe
2 tablespoons black lumpfish roe
juice of 1 lime
1 pound cheap sea salt
crushed ice
3 slices lime -- cut into quarters

Lay the oysters on a bed of crushed ice mixed with sea salt. 

Add a teaspoon of lumpfish roe and a teaspoon of sour cream to each.

Squeeze the lime juice over the top and garnish with lime slice quarter.
