Provençal Potato Cake

1 kilogram potatoes
2 small leeks
1 onion
4 cloves garlic
2 teaspoons fresh ginger -- grated
1/2 tablespoon fresh rosemary
40 grams parmesan
2 tablespoons dried breadcrumbs

Preheat oven to 180oC.

Peel and wash the potatoes and cut into fine slices.

Peel and crush the garlic, chop the leek and onion and fry together with 40g of the butter. When soft but not coloured add the ginger, rosemary and season. 

In a round dish layer the pototoes with the leek/onion mixture.

Season with salt and pepper. Sprinkle with parmesan and breadcrumbs and dot with remaining butter.

Cover with foil and bake in preheated oven for 30 minutes. Remove the foil and return to the oven for a further 15 minutes until top is golden.

Garnish with a little more rosemary.
