Red Onion Gravy

3 red onions -- sliced paper-thin
20 fluid ounces good beef stock
1 tablespoon plain flour
2 teaspoons dark brown sugar
salt and pepper
good quality olive oil

Head olive oil in large saucepan and cook the onions and sugar over a very low heat for and hour and a half

Add the flour and cook for a few minutes

Blend in the stock and bring to the boil

Serve hot
