Rosti Potatoes

4 large waxy potatoes
salt and pepper
oil and butter for frying

Boil the potatoes in their skins for 10 minutes. Remove from heat and allow to cool.

When cool, remove the peel and grate coarsely into a large bowl. Season with salt and pepper.

Preheat a large frying pan, add oil and butter. Place 4 metal ring moulds in pan and fill each with grated potato mixture.

Cook for about 8-10 minutes on each side until golden brown. Serve hot.
