Sage & Onion Mash

2 large floury potatoes
1 medium red onion
1 tablespoon sage leaves
1 ounce butter
2 tablespoons cream
1 teaspoon olive oil

Peel the potatoes and cube, put in saucepan and simmer until tender.

Finely chop the onion and fry in half the butter with olive oil until just beginning to brown, add sage and cook for another couple of minutes. Set aside.

Drain the potatoes and put through a potato ricer, Mouli sieve or mash until very smooth with remaining butter and cream.

Stir in the onions and sage together with their cooking fat.

Pile into two individual serving dishes

 Brown in oven 200oC for about 15-20 minutes.
