Sour Cream, Chive and Salmon Burgers

350 grams fresh salmon fillet
60 grams smoked salmon (trimmings are fine for this recipe)
1 rounded tablespoon thick crème fraîche (or cream cheese)
1 big hand full chives -- finely chopped
4 small spring onions/scallions -- finely chopped
1/2 lemon -- juiced
sea salt & ground black pepper

Extra sour cream and chopped chives to serve.

Trim the salmon of any brown flesh, skin etc.

Cut half of the salmon into cubes and process until just smooth - take care not to overwork the fish.

Stir in the sour cream until just blended.

Cut the remaining salmon into cubes of about 1cm (1/2 inch), cut smoked salmon into similar sized pieces a stir into the fish puree with the chives, lemon juice, spring onions and seasoning.

Shape into two burgers and chill for at least an hour.

Heat half an ounce of butter and a splash of olive oil in a heavy based pan, add burgers and fry for a minute or two each side.

Serve with salad and dollop the sour cream and chives.
