Shortbread

245 grams plain flour -- sieved
30 grams semolina
180 grams unsalted butter -- chilled
90 grams caster sugar
Combine the flour and semolina in a bowl or in a pile on the worktop.
Grate butter onto flour and work in with fingertips as if making pastry.
Add sugar and work together until a pastry is formed.
Roll out or shape as desired. Bake at 170ºC for about 20 minutes. It will not be crisp until cold.
