Chicken Simmered in White Wine with Cream

5 slices pancetta -- cut into lardons
12 baby onions -- peeled
2 chicken breasts, preferably bone in -- skinned
1/2 cup dry vermouth
1 cup chicken stock
1 heaped teaspoon cornflour
1/2 cup cream
Heat a large frying pan and brown the pancetta. When the fat begins to render add the baby onions and cook for several minutes until the onions start to brown.
Add the chicken breasts and brown. Add the stock and vermouth, reduce the heat and simmer until the chicken is cooked.
Blend the cornflour with the cream and add to pan, stir until the sauce thickens. Serve.
