Soft White Rolls

450 grams plain flour
1/2 teaspoon salt
45 grams butter
3/4 cup milk
3/4 cup water -- just off the boil
30 grams fresh yeast
1 teaspoon sugar

Cream the yeast and sugar together until liquid. Pour the hot water into a bowl and add the butter, stir until almost melted and add the milk. Check temperature, it should be just about blood heat, add to yeast mixture and set aside in a warm place until frothy (about 10 minutes).

Sieve the flour and salt into the bowl of a mixer with dough hook. Add the liquid and knead (either by machine or hand) for 10 minutes.

Cover the bowl and leave to rise until doubled in size.

Knead the dough again for a few minutes and divide into 12.

Shape rolls to your liking and place on a baking sheet, cover with a clean cloth and allow to rise for another 30 minutes.

Bake at 180oC for 25 minutes approx until risen, golden brown and sound hollow when tapped on the bottom.
