Spaghetti Bolognaise Sauce

250 grams lean minced beef
2 rashers bacon or pancetta (optional)
1 onion -- chopped
2 cloves garlic OR
2 teaspoons garlic puree
1 tablespoon dried oregano
1 tablespoon tomato puree
125 mls any type of wine or beef stock
3 tablespoons cream (optional)
1 400 gram tin of chopped tomatoes
fresh green herbs -- chopped
salt & pepper
Heat a large pan and dry fry the mince until brown, breaking it up all the time - you will need a fairly high heat.
Add the chopped onion and garlic, turn down the pan and stir fry until the onion begins to soften.
Increase the heat a little and add the stock or wine, let it cook until all the liquid has evaporated.
Add the tomatoes and tomato puree, rinse out the tomato can with water and add to pan.
Simmer for about an hour.
Stir in the cream (is using) and the herbs. Check the seasoning before serving.
