Spicy Spuds

250 grams peeled, boiled and sliced potatoes
1 large onion -- chopped
3 cloves garlic -- crushed
1 1/2 inches ginger -- crushed
fresh chilli to taste -- crushed
1 heaped teaspoon ground coriander
1 heaped teaspoon cumin seeds
1/2 teaspoon turmeric
1/2 teaspoon chilli powder
1 tablespoon tomato puree
1 tablespoon cream
2 heaped teaspoons garam masala
fresh coriander leaves
groundnut oil for frying
salt and pepper
Heat a frying pan and add about 2 tablespoons of oil, fry the onions, chilli, garlic and ginger over a low heat for about 15 minutes.
Add the spices to the pan and continue to fry for 5 more minutes.
Add the potatoes increasing the heat slightly, add a little more oil if necessary.
When the potatoes are fully coated with the spice mixture add the tomato puree and cream, cook for another 5 minutes or so.
Add the garam masala and check seasoning. Serve garnished with the coriander leaves.
