Indian Style Spinach & Potatoes

400g potatoes -- washed & boiled
150g spinach -- washed and dried
1 large onion -- chopped fine
4 cloves garlic -- crushed
4 medium tomatoes -- chopped
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon turmeric
3 small hot chillies -- crushed
2 teaspoons garam masala
1 bunch fresh coriander -- chopped
oil for stir fying
salt and pepper

Gently fry the onion in a large frying pan or wok until soft and golden brown.

Add the garlic, chillies and all the spices apart from the garam masala. Cook until fragrant.

Add the potatoes, if too dry add a little more oil. Stir fry until coated with onion and spices.

Add the tomatoes, cook for a few minutes further. Season to taste.

Shred the spinach and add to pan, cook until spinach is just starting to wilt.

Stir in the coriander and garam masala.

Check seasoning and serve immediately.
