Springtime Salad

6 quail eggs
2 large slices smoked salmon
6 cherry tomatoes
1/2 bunch asparagus
salad leaves of choice
Dressing
1 tablespoon white wine or tarragon vinegar
1 tablespoon cream
1 tablespoon lemon juice
2 tablespoons olive oil
1/2 teaspoon grain mustard
sea salt and black pepper
Freshly chopped dill or flat leave parsley or a mix of both to garnish.
Wash and dry the salad leaves and tomatoes and set aside.
Cook the asparagus for 3-5 mniutes until tender, blanch in cold water and set aside.
Put the quail eggs into a pan of simmering water and cook for 2 minutes. Shell and set aside.
Preheat grill and cook smoked salmon for a minute or so.
Whisk the ingredients for the dressing together in a medium size bowl. Add dried salad leaves and coat evenly. Divide leaves between two plates. Add the remaining prepared ingredients, garnish with herbs and serve.
