Stilton & Walnut Biscuits

200 grams plain flour
100 grams butter
100 grams Stilton
50 grams walnut pieces
1 egg

Light oven Reg 5/180oC.

Place flour in food processor, add butter and process to breadcrumb stage. Add Stilton and walnuts, process, add egg, process. A little water may be added if necessary.

Put mixture onto a floured board and knead slightly to form a dough. Roll out, I would recommend doing about a quarter of the dough at a time. Roll thinly and cut circles or other shapes. 

Place onto greased baking trays. Brush the tops with egg wash or milk, a few chopped walnuts may be put on with a little crumbled Stilton, bake for about 10 minutes until golden brown.

Store in an airtight tin.

If you are not using a food processor, rub butter into flour, add grated or finely crumbled Stilton and finely chop the walnuts. 

Any cheese can be used, strong flavoured is best.

Sweet biscuits can be made by omitting the cheese, adding 3 oz caster sugar, I prefer vanilla sugar, or add vanilla essence. oz walnuts or almonds or mixed nuts can be used along with oz chocolate chips, or use 4oz nuts, graded orange peel can be added.
