Strawberry Tart

125 grams slightly sweet short crust pastry
1 egg
1 egg yolk
200 mls cream
100 grams very ripe strawberries
50 grams caster sugar
2 large strawberries extra
icing sugar

Roll the pastry and use to line 2 x 4" mini quiche/flan dishes. Bake blind at 200C for 10 minutes.

Put the strawberries into a blender and puree, sieve into a bowl.

Beat the egg, the egg yolk, sugar and cream together, add strawberry puree.

Pour into part cooked pastry cases.

Bake at 150C for about 25 minutes until the custard is set.

Dust with icing sugar and decorate with a sliced strawberry.
