Stuffed Potatoes

8 new potatoes -- baked until tender
1/4 cup sour cream of creme fraiche
1 jar lumpfish caviar or salmon roe
1/4 lemon -- thinly sliced

Cut the potatoes in half lengthwise and scoop out a little flesh keeping skin intact.

Cut a sliver from the bottom of the potatoes so they will stand upright.

Top with a spoonful of soured cream and a spoonful of the chosen caviar.

Garnish with a small slice of lemon
