Sweet Pie Dough

1 1/4 cups all purpose flour
1 egg
1 teaspoon baking powder
3 tablespoons cold unsalted butter -- cut into small cubes
3 tablespoons cold milk
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon

In a small bowl sift together 3/4 cup plus 2 tablespoons of the flour and baking powder, set aside.

In a medium bowl combine the egg and sugar, mix with a large spoon until it is frothy (about 1 minute)

Add the butter and stir for just a few seconds until the butter has separated into pieces but not creamed into the mixture.

Add milk, vanilla, nutmeg and cinnamon, stir.

Add the flour mixture stirring until just about blended.

Flour a surface generously and separate the dough into 1 portion 2/3rds and 1 portion 1/3rd.

Roll the larger portion of dough into the flour until it no longer sticks to your hands.

Place in the centre of a 9", extra deep pie pan and gently work into the sides, trim the edges and set aside.

(The extra dough will not be needed for pumpkin pie)

Heat the oven to 375oF (190oC, Gas Mark 6) or 350oF (180oC Gas Mark 4 if using a glass pie pan)

Line the crust with foil and , leaving a large overhang and weight with baking beans.

Bake for 8 minutes. Remove the foil and weights and return to oven for 3 more minutes.
