Tabbouleh

50 grams bulghur wheat
1/4 cucumber -- diced
1 small onion
handful parlsey -- chopped
sprig mint, chopped
garlic -- crushed
4 tablespoons virgin olive oil
2 tablespoons lemon juice
salt & pepper

Soak the Bulghar wheat in plenty of cold water for 20 minutes, drain and squeeze dry.

Chop the onion and mix everything together, adjust to taste.

Chopped tomato may be added. Serve on a bed of lettuce.
