Sylv's Thai Style Relish

3 tablespoons caster sugar
2 1/2 fluid ounces white wine vinegar
2 1/2 fluid ounces water
1/2 red onion -- cut in half & thinkly sliced
3 inches cucumber -- seeded & thinly sliced
1 inch fresh ginger -- cut into julienne
1 red chilli -- very finely chopped
2 tablespoons coriander leaves -- chopped
2 cloves garlic -- very finely sliced
Put the vinegar and water into a pan with the sliced garlic. Very slowly bring to the boil and stir until the sugar has dissolved.
Leave to cool. Add the onion, cucumber, ginger and chill. Refrigerate for a couple of hours (or up to overnight)
Just before serving stir in the coriander leaves.
