Three-Root Rosti

3 medium potatoes
1 medium carrot
1/8 celeriac
50g butter, melted
olive oil for frying
butter for frying
salt and pepper

Peel and coarsely grate the vegetables, keeping the size as consistent as possible.

Mix thoroughly and season well. Add melted butter.

Melt about 1oz of butter with a little olive oil in a heavy based frying pan. Add metal rings.

Fill with grated vegetable mix.

Allow to brown well. Add a little more butter to the pan.

Carefully turn and brown on the other side.

Remove potato cakes to a baking tray lined with non-stick paper, top with a level teaspoon of butter.

Bake at about 180oC for 20 minutes.
