Tiramisu Cake

90 grams SR flour
30 grams cocoa
4 eggs -- medium
125 grams caster sugar
3 tablespoons corn oil
125 grams sugar -- for syrup
2 tablespoons instant coffee granules -- for syrup
300 millilitres water -- for syrup
3 tablespoons amaretto -- for syrup
250 grams marscapone cheese -- for topping
150 millilitres double cream -- for topping
1 tablespoon icing sugar -- for topping
2 tablespoons amaretto -- for topping
2 tablespoons cocoa -- for topping

Whisk the eggs and caster sugar together until thick and creamy, and the
whisk leaves a good trail.
Sift the cocoa and flour together and fold into the egg mixture.
Fold in the corn oil, being careful not to knock out the air.
Bake in a round 20cm (8") prepared tin, at 180C for 25 minutes.
Cool for ten minutes in tin then turn onto wire rack.
Make a coffee syrup in a measuring jug, by dissolving the sugar and coffee
granules in about 150 ml of boiling water, then make up to 300ml with cold
water. Add 3 tablespoons of amaretto.
Place the still warm cake on a serving plate, prick lightly all over with
a skewer and then slowly pour over the syrup.
Allow time for the syrup to soak into the cake before adding the topping.
(Up to 2 days is OK, so you can make it well ahead of time)
No more than two hours before serving, make topping: Beat the marscapone
cheese and cream together until the mixture thickens.
Add the icing sugar and 2 tablespoons of amaretto. Spread the mixture
thickly over the top of the cake, and take it over the sides and down to
the bottom of the cake in a thinner layer.
Make deep grooves on the top of the cake with the blade of a blunt knife,
and sift the remaining two tablespoons of cocoa over the top. Chill until
ready to serve.

NOTES : YOU NEED TO START THE CAKE THE DAY BEFORE IT WILL BE NEEDED

If you can't get marscapone cheese, add 60g of natural yogurt to
175 g of cream cheese - this may need a little extra sugar.

Brandy could be used in place of amaretto, but then you couldn't
call it a Tiramisu cake!
