Mozzarella & Roast Tomato Tart

250 grams short crust pastry
125 grams buffalo mozzarella cheese
250 grams small ripe (on vine) tomatoes
4 eggs -- beaten
200 mls cream
125 grams Emmental cheese -- grated
large hand full of basil leaves -- shredded
salt and pepper

Line a 25cms tart tin or dish with pastry, bake blind at 200c for 12 minutes, remove lining paper and return to oven for a few more minutes.

Roast the tomatoes whole for 30 minutes at 130C.

Cut mozzarella into thick slices and place in half cooked pastry case, add roasted tomatoes.

Blend beaten eggs with cream, stir in grated cheese and basil, pour over mozzarella and tomatoes.

Bake at 170C for 30-35 minutes until filling puffs and sets.

Best served warm or at room temperature.
