Tomato Relish

3 kgs tomatoes -- peeled and chopped
6 large onions -- chopped
4 cups white vinegar
3 1/2 cups sugar
60 grams salt
1 1/2 tablespoons curry powder
2 level tablespoons mustard
1/4 teaspoon cayenne pepper
3 tablespoons cornlour

Put the tomatoes and onions in a pan with the vinegar (reserving a little), boil together for about 5 minutes.

Add the sugar, salt and spices, boil for one hour.

Mix the cornflour to a smooth paste with the reserved vinegar and stir into the relish to thicken it.

Cook for 15 minutes longer.

Pour into sterilized bottles and seal.
