Tomato Soup

1 kilogram ripe tomatoes -- washed, cored & quartered
140 grams tin tomato puree
2 shallots -- chopped
1 1/4 cups good stock

Put all the ingredients into a pan and simmer for about an hour until the tomatoes have cooked down to a puree.

OR

Place the tomatoes, puree and shallots in a large microwave bowl, cover and cook on medium power for 15 minutes until the tomatoes have broken down to a puree. Add stock.

Tip into a blender and blend until as smooth as possible. Pour through a fairly open sieve to remove any remaining seeds or skin.

Pour into a clean pan/bowl and reheat before serving.

A quarter cup, 2 fluid ounces, of cream may be added at the end of cooking time if a cream soup is preferred.
