Tricolour Omelette Canapés

6 eggs -- separated, 2 to a bowl
1 tablespoon tomato puree
1 handful spinach leaves, wilted by scalding
1 tablespoon cream
salt & pepper
butter to fry
Blend 2 egg yolks with the cream. Whisk 2 egg whites until stiff, combine with the yolks and season.
Fry resulting omelette in butter, when set on the bottom, turn carefully. When cooked set to one side.
Blend 2 egg yolks with the tomato puree. Whisk 2 egg whites until stiff, combine with the yolks and fry as before.
Blend the remaining two egg yolks with the wilted spinach - preferably in a mini food processor. Beat the egg whites as before and fry omelette as before.
To assemble lay the tomato omelette on a chopping board, top with the plain then spinach omelette. Cut into cubes and put onto cocktail sticks.
