Vegetable Soup

500 grams vegetables
1 onion
1 medium potato
25 grams margarine OR
1 tablespoon oil
600 mls stock
bouquet garni
salt & pepper
Prepare vegetable, peel & chop.
Peel and chop onion and potato.
Heat margarine or oil in a saucepan large enough to hold all the soup.
Add onion and fry gently until softened.
Add vegetables and potato, cook for a few minutes.
Add the stock and bouquet garni, bring to the boil.
Cook for 15-20 minutes until the potatoes are soft and the vegetables cooked.
Put through a liquidiser, food processor or push through a sieve.
Season to taste and serve hot.
