Frozen Christmas Cheer Mousse

6 large egg yolk
1 cup caster sugar
2 cups thickened cream
2 tablespoons dark rum
2 tablespoons brandy
1 teaspoon vanilla essence
1/4 teaspoon nutmeg
1 punnet raspberries
chocolate shavings to decorate
Beat egg yolks and sugar with an electric mixer until thick and pale in colour.
Transfer mixture to the top of a double saucepan and whisk over simmering water until mixture thickens and coats the back of a metal spoon.
Remove from the heat and cool. In a separate bowl beat cream until soft peaks form then fold in rum, brandy, vanilla and nutmeg.
Fold cream mixture into cooled egg mixture and stir just until combined. Spoon into six individual serving glasses (3/4 cup capacity), cover
with plastic wrap and freeze overnight.
To serve, remove mousse from freezer decorate with raspberries and chocolate and serve immediately.
