Yorkshire Pudding

125 mls water
half a cup of strong flour
2 eggs
salt
goose fat or dripping

Sieve the flour into the water with the salt. Whisk until free of lumps. Whisk in the eggs.

Allow to rest for at least an hour.

Put about a teaspoon full of goose fat or dripping in each pan of a muffin tin and heat at 230oC until smoking. Pour on the prepared batter and bake until golden brown and risen, about 15 minutes.
